
For the next two weeks, I am staying with the Olsens in a town half an hour outside of Copenhagen. Lars and Cecilie graciously picked me up at the airport and I was greeted with a fresh apple from their orchard and a croissant after having eaten absolutely no airplane food. Off the main road in Roskilde, accompanying the house is a barn, a large glass greenhouse, and a cidery. There are over 700 apple trees, along with some pears, plums, raspberries, and various vegetables.

I haven't stopped finding similarities between my life and this family. On the first night we had wood fired pizza, and I made a dessert pizza for them with apple, maple syrup, and cheese, remembering those Trek to Taste days. Family meals are important to the Olsens, as with my family. Lars loves a mean ping pong match, and Cecilie is excited for me to make some apple cake and applesauce for the family (they'd never heard of it!). One can do everything and nothing here; it is a beautiful place to relax but there is never a shortage of tasks to accomplish. Laziness is frowned upon in Denmark!

Long story short, I feel quite at home here :)
